    Every September the calls start: "Are you doing a pumpkin spice?" The honest answer is no, and the longer answer is this — the honey cinnamon latte. It's the drink we make when we want something warm and a little sweet, and it has quietly become one of our top three hot orders from October through February.

    Real ingredients, in that order

    The base is local honey, warmed gently so it dissolves into the milk without scorching. Then comes a small amount of ground Ceylon cinnamon — not cassia, which is what most "cinnamon syrups" actually are — whisked in until the milk smells like a kitchen. Two shots of espresso go in last, and the whole thing comes out a soft amber color with a thin band of foam on top.

    Honey gives the drink its body. Cinnamon gives it its memory. Espresso keeps it from being a dessert.
